Creamy Zucchini Salad

And here is my Creamy Zucchini Salad ! The easiest you can make and the healthiest you can eat.

The cream is just for the name but its one of my favorite dressing otherwise and I just love it.I make this yummy sauce with paneer and then few add-ons here and there.  Saute the vegetables to make it little softer but not limp to lose the minerals and vitamins. You want them raw with a bite. Do Not cook them, just a toss or two and that’s it.

Feel free to add as many vegetables you want in this Creamy Zucchini Salad, but remember to maintain the uniformity. The colors and sizes they are cut into make a salad stand out and taste great too. So be very careful when doing that. Another important part is not to add the dressing when the veggies are hot, let them cool and then add, so it doesn’t melt and turn watery. Ingredients

  • 1 Zucchini
  • 1 Tomato
  • 1/2 Capsicum
  • 1/2 Onion
  • 2 tbsp Chopped Garlic
  • 1 tsp Olive Oil
  • 1 tsp Black Pepper
  • 1/4 cup Paneer
  • 1 tsp Oregano
  • 1/2 tsp Chilli Flakes
  • 1 tsp Salt
  • 1 tbsp Hung Curd
  • 1 tsp Honey
  • 1 tsp Sesame Seeds
  • 1/2 tsp Lemon Juice

Instructions

  1. Dice Zucchini, Bell Pepper and De-seeded tomatoes. Remember to cut them into uniform pieces.

  2. Heat a pan and add 1 tsp olive oil and then add garlic and saute it for 30 secs and then add all the diced veggies with salt and pepper and toss these for 1 min and then add in a bowl and let it cool down.

  3. In a mixer add paneer, garlic, oregano, hung curd ,honey,salt and pepper and make a paste of it.

  4. Once the veggies are cooled down mix this creamy dressing with 1/2 tsp of lemon juice and then keep this in refrigerator for 20 mins.

  5. Now add some chilli flakes, pepper , sesame seeds etc and serve chilled salad.
