Baby Corn & Spinach

Baby Corn & Spinach is a simple way to replace dairy from the Spinach gravy.

Well this just helps body to absorb the iron better, the whole reason why we all like eating Spinach.So ya while Spinach is great and so is it nutrition, then why not get the maximum of it. While making corn and palak is not new this is first time I tried babycorn and they do taste great as well. I love eating this dish and serving the with some plains rice and dal.

The recipe goes very well with some missi roti or some laccha paratha. Try this combo it you are not in mood to have this with plain rice,

Ingredients

  • 8 Baby Corns
  • 1 cup Blanced Spinach Puree
  • 4 tbsp Chopped Garlic
  • 1 Chopped Onion
  • 1 Green Chilli
  • 1 tbsp Cumin Seeds
  • 1/4 tsp Red Chilli Powder
  • 1/4 tsp Coriander Powder
  • 1/8 tsp Turmeric
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Garam Masala
  • 2 tbsp Kasoori Methi
  • 2 tbsp Besan
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
  • 1 tbsp Oil

Instructions

  1. Heat Oil and add cumin seeds, green chilli and garlic and saute for few seconds.

  2. Add chopped onions and saute for 1 min and then add red chilli powder, turmeric, cumin powder and coriander powder .

  3. Meanwhile boil water and add baby corns and blanch for 5 mins.

  4. Slit the babycorns in two and add in the wok with some salt and besan and cook on slow for 1 min without covering.

  5. Now add the spinach puree and mix well and add kasoori methi , garam masala, a little water and adjust salt if needed and just let it boil once.

  6. Once it cools add lemon juice and serve immediately with roti or rice.
