Coffee Walnut and Dates Cakeis something you would try again. It’s super yum with even tea and has coffee of its own. The inspiration to create this recipe came from my better half who loves everything which has coffee. So ya while I love tea , he is a pure coffee fan and if I may say…Filter Coffee fan.
So though I have tried coffee cookies but Coffee Cake was new. I also wanted Coffee taste to be subtle so this cake leaves you with a lingering coffee flavour and that’s what I love. I purposely avoided jaggery as then jaggery’s earthiness would have overpowered the coffee flavour. So unrefined sugar works best with combination of Dates. You can however increase dates quantity and reduce more sugar.
This cake was part of a family birthday celebration and while everyone is online, all we could do it make a cake and enjoy on everyone;s behalf. These lockdown times would always have some really strong memory.
Coffee Walnut and Dates Cake
Ingredients
- 1 cup Wholewheat Flour
- 3 tbsp Coffee
- 15 Dates
- 1/4 cup Water
- 1/2 cup Yoghurt
- 1/4 cup Oil
- 1/4 cup Unrefined Sugar
- 15 Walnuts
- 1 tsp Vanilla Essence
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
Instructions
First thing first, grease the baking dish and keep it aside. Warm little water add all the coffee in it and let it brew. Roughly chop walnuts and keep ready.
In whole wheat flour mix baking soda, baking powder and salt and sieve it atleast 4 to 5 times.
Put the over on preheat at 180 degrees for 10 mins.
Now de seed the dates and with finger mash it nicely and then add dates mixture into the coffee water along with vanilla essence and mix it well with a spoon.
In a deep bowl mix oil and curd together and then add unrefined sugar and mix well.
Now gradually two spoons at a time add the dry whole flour mix and keep folding gently till all is mixed.
Now add the dates and coffee mix in the batter. The batter will be lumpy but if its too dry then add 2 tbsp of milk otherwise not needed.
At the end mix walnuts and then transfer the batter into the baking tray.
Tap the tray for the batter to spread uniformly and then bake for 30 mins at 180 degrees.
Do not open the oven in between, but once its 30 mins then do a tooth pick test. If its not done bake for another 5 mins. If done , which it should be most likely then let it sit inside for min 10 mins. Later take it out and cool it and then serve.
