Here is Atta & Sattu Cake with some Walnuts and Chocochips for you. Idea to try this recipe was that one I love Sattu, which is poor man’s protein from up north and second it gives a very nice earthy flavour to the cake. Just a simple recipe with a little tweaked proportions but otherwise if you have baked in past, this is easy.

I think personally I feel adding chocochips and banana combination helped this to be more appealing for my kiddo. Also addition of curd along with banana gave enough moisture, so I could manage this with just 1/4 cup of oil. Also sweetness has been kept mild using jaggery along with banana which also worked well. You can increase the jaggery if you want it sweeter. However I feel if you want to eat healthy, its important to keep sweetness less even if it is healthy sweetener.

Another part is the seive it multiple times for adding more air and not over mixing is what I feel works well for me. I do take care of controlling the liquid part if I add things like curd etc with oil. The batter should just be of thick and falling consistency not runny. This helps in even baking and getting good texture too. Still not a baking pro, but most of my healthy experiments come out well. Next thing is that then oven temperature and time understanding does take few iterations. However in couple of baking session you would get a hang of it. For me 180 degrees and 25 min for a 1/2 kg cake is perfect.

I hope you enjoy making this Atta and Sattu cake and you might want to check for more of my sattu experiments here .

Ingredients

  • 3/4 cup Whole Wheat Flour
  • 1/4 cup Sattu (Roasted Channa Flour)
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 Ripe Banana
  • 1/4 cup Jaggery Powder
  • 1/4 cup Curd
  • 1/4 cup Milk
  • 1/4 cup Oil
  • 1 tsp Vanilla Essence
  • 4 tbsp Chopped Walnuts
  • 1 tbsp Choco chips

Instructions

  1. Mix baking powder, baking soda, salt, sattu and wholewheat flour together and sift/sieve it three times. At this point put the oven for 10 mins preheat.

  2. Next mash banana in a deep bowl, add jaggery , curd and oil and beat them together till they are evenly mixed.

  3. Add vanilla essence to this this and gradually mix the dry flour mixture into this bowl.

  4. Use a spatula to fold all the ingredients so they mix together. You might need to add milk at this point as the batter gets dry however take care not to over mix the batter.

  5. Now mix chopped walnuts and choco chips too. Grease the baking pan and pour the mixture in the centre of the tin and then tap it to make it even.

  6. Bake it at 180 degrees for 25 mins and then do a tooth pick test. If the tooth pick comes out clean , let the cake sit for another 10 mins before you take it out. Enjoy it with some warm milk or just like that.
