Coffee Walnut Ragi Cookie taste like brownies. Yes! I could have easily called it one. However I just thought to keep it more ingredient specific so one can relate to the taste before trying out. You can also increase the quantity of coffee if you want more flavour. Since mostly its my son who eats cookies, hence I kept the coffee flavour just minimal.
How did I think about this combination? Well a friend was once experimenting and she tried this in cake so I thought of trying it out in my cookies too. Thanks to Mehak who gave this brilliant idea, these cookies turned out yum. However these cookies are a little chewy as compared to the other cookies I make. But every bite gives you flavour of coffee, though you can add more based on your taste but I won’t say to add too much coffee too. The fun is in just having a flavour and also more coffee means more sugar to balance the same. These Coffee Walnut Ragi Cookie are perfect just the way they are. These Coffee Walnut Ragi Cookie are gluten free, however if you want feel free to use wholewheat flour instead of Ragi. Remember to use cookie cutter for adding more fun to your cookie baking and it does add more appeal and neatness to cookies.

Coffee Walnut Ragi Cookie
Ingredients
- 1 cup Ragi Flour
- 1 tbsp Coffee Powder
- 1/4 cup Chopped Roasted Walnuts
- 3/4 cup Jaggery Powder
- 4 tbsp Ghee
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/4 cup Milk
Instructions
Mix Jaggery powder and ghee together and with help of a beater whisk it till its all mixed and little forthy.
Add coffee, baking powder and salt in the Ragi flour and sieve it 2-3 times. At the point put the oven on preheat and grease the cookie tray.
Now gradually 2 tbsp at a time start mixing the flour in the Jaggery and ghee mixture and mix it.
Once all the flour is added , add little milk to help mixing everything in form of a dough.
You can use your hands to mix it but not to over mix or knead it.
Add finely chopped walnuts too and mix it.
Gently flatten the dough on a parchment paper and with cookie cutter cut our cookies 1/2 to 1 inch thickness.
Bake these for 8 mins on one side and then flip them and bake again for 3 mins.Let it cook down and then they would turn crispy.
