Bajra Brownies are simply yummy! For a non bakers person like me imagining that Bajra can be so versatile it was a surprise in itself. However now that I have started experimenting more on bakingcourtsey my son, I realise how much fun it is.
So millets or rather Pearl Millets , an english name given to Bajra are not just ancient grains but are also rich in protein , fibre. Hence they should definitely be added in our diet. I also feel these millets have a great taste which combines well with baking ingredients like cocoa, vanilla etc. Now this my personal take. However the bottom line is whatever makes it healthy and tasty, we would stick to it.
Also it hardly takes any time, considering I don’t use electric beater etc too. Well I always want to save time but it you want you can , it would only help in more aeration and a better texture. Did I tell you my 8 year old and my better half finished the whole batch in one day. Like both on repeat mode..thank god I clicked pictures of these Bajra Brownies before they could gobble them off 🙂
Bajra Brownies
Ingredients
- 1 cup Bajra or Pearl Millet Flour
- 1 Banana
- 1/2 cup Jaggery
- 1/2 cup Oil
- 1/4 tsp Vanilla Essence
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/4 tsp Salt
- 1/4 cup Chopped Walnuts
- 2 tbsp Sliced Almonds
- 2 tbsp Cocoa Powder
- 2 tbsp Chopped Chocolate
- 1/2 cup Milk
Instructions
Add cocoa powder, baking powder, baking soda and salt in the Bajra and sift them twice or thrice and keep aside.
Now put the oven on preheat at 200 degrees .
Take a deep bowl and mash banana, add vanilla and then jaggery and mix it till it all blends well.
Now pour the oil into the banana mix and give it a good mix again. Once oil mixes well start adding the dry bajra mix gradually in parts and keep mixing in cut and fold method.
Once all the bajra mix it added and if the batter is too dry, which it would be , add some milk too and mix it again for a thick pouring consistency. Add the chopped walnuts and give one final mix.
Now layer a baking tray with baking sheet or grease it with oil and dust with flour. Pour the batter in the centre and tap it to spread evenly.
Sprinkle the almonds over the cake batter and bake it for 25 mins on 180 degrees. Do a quick knife test and if it comes clean then let it rest in over for another 10 mins and if it still gets some batter on knife bake it for another 5 mins.
Serve with a glass of milk or enjoy with a hot coffee.

No, you can increase the sweetner and milk by 1/4 cup for the moisture. Banana gives both sweetness as well as moisture, so need the balance.
