Like I said, someone who barely bakes…these Ragi and Jaggery Brownies are definitely a big deal. However now that I have done this and everyone at home loved it so much that you might see me trying out on healthy bakes more often. Thanks to my CookWithRD baking partner Tasneem who inspired me to try this out.
To get this in place I did refer a recipe which was posted on a healthy baking group I follow, Ovenderful Moms and then I added few tips from Tasneem and made my own changes and voila here they are ; Ragi and Jaggery Brownies!
I used Organic Jaggery Powder which is a regular at my home and then Rice Bran oil in particular went really well in adapting the taste of Ragi which along with Cocoa blended well.I was little apprehensive about Jaggery initially but when I tasted the batter, all I could do was wait for it to bake. You must try this recipe of guilt free Ragi and Jaggery Brownies and enjoy at home or pack for tiffins.
Ragi and Jaggery Brownies
Ingredients
- 1/2 cup Wholewheat Flour
- 1/2 cup Ragi Flour
- 1 cup Jaggery Powder
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/8 tsp Salt
- 3/4 cup Rice Bran Oil
- 1 cup Curd
- 2 tsp Vanilla Essence
- 1/2 cup Almonds
- 2 tbsp Milk
- 1/2 cup Cocoa Powder
- 3 tbsp Choco Chips
Instructions
Take a bowl add whole wheat flour, ragi flour, baking powder, baking soda, cocoa powder, salt and once all are added transfer it to a sieve and sieve it thrice.
In a seperate bowl mix curd, oil and jaggery with a whisker till its all smooth.
Gradually mix the flour mix in the wet mix of curd, oil and jaggery. Start with two tbsp at a time and keep mixing it gently, however avoid over mixing it.
Add milk , choco chips and chopped almonds in the mixture and give a final mix.
Smear some oil in a baking dish and dust cocoa powder and then transfer the brownie cake mix but fill only till the tin is half. Sprinkle some chopped almonds along with choco chips If you have more mix you will have to use another tray of a bigger tray.
Preheat the oven and then bake the brownie at 180 degrees for 40 mins. Check by inserting a tooth pick if it comes out clean then the cake is done.
Let it stay in oven for 10 mins before you take it out to cook on a rack.
After some 20 mins you can cut it in small cubes and enjoy.
