The version has its pure veg options too, so incase you aren't an egg eater, you still have a way to make this yummy sandwich. And those of you who love eggs as I do, your Omega 3 rich , protein loaded sandwich is ready to enjoy your meal.
Now you can't go wrong with the simple recipe, infact the beauty of cooking is in the simplicity and limited ingredients. You still have choice on cheese for I used minimal and it being high on sodium smaller quantity is always better to have. Golden rule is to have everything in small portions so that you can relish them longer.

Ingredients
- Whole wheat bread : 4
- Mushrooms : 6-7 chopped
- Garlic: 1 tsp chopped
- Capsicum: 2 tbsp chopped
- Tomato: 2 tbsp chopped
- Black pepper powder: 1/2 tsp
- Salt: 1/4 tsp
- Mixed herbs: 1/2 tsp
- Tomato paste: 1 tbsp
- Processed cheese: 1 tsp grated
- Oats: 2 tbsp
- Flax seeds : 1 tsp
- Egg: 1
- Oil: 1 1/2 tsp
- Milk: 2 tbsp
Instructions
- Heat 1/2 tsp oil and saute garlic in it.
- Next add capsicum, tomato and mushrooms and saute for 30 secs.
- Add black pepper powder,salt and mixed herbs and cook for another 30 secs.
- Now mix fresh tomato puree and cook till the water almost evaporates.
- Now add cheese, just enough for vegetables for stick to each other and not too much.
- Let this mixture cool.
- Take two bread slices and trim the sides and apply the mixture and cover it up with the other bread slice.
- Separately in a mixer grinder powder oats, flax seeds with some black pepper, mixed herbs and salt.
- Now mix the oats powder with one egg and some milk and gently make a runny liquid.
- If you don't want to use egg, you can increase the quantity of milk instead of egg.
- Next smear some oil on a pan and dip the sandwiches and pan toast them.
- Serve hot with a glass of milk and let everyone enjoy.
