Baked Vegetables in Multigrain Sauce, sounds interesting no??
Well I have one fan family for baked vegetables and this flows in generations. My dad loves baked vegetable and I remember how this was a regular at my home.Infact the first time my husband had come over for a meal with us, this is what mom had made..and since then the love for baked vegetables just got passed on.
However my mom, used to make sauce with refined flour and without any doubt we all loved it. But now that we are getting more cautious , I thought of giving it a little twist with a healthier version on my sauce. And that when we got our vegetables new dressing of multigrain sauce.
This not just tasted great but my brother who was visiting me for Rakhi loved it and that just cleared my experiment with flying colors. So before we waste more time, here is the recipe for Baked Vegetables in Multigrain Sauce.
- Multigrain Flour: 1 tbsp
- Ragi Flour: 1 tbsp
- Olive oil/butter:1 tsp
- Black pepper: 1 tsp
- Oregano: 1 tsp
- Salt: as per taste
- Chilli flakes: as per taste
- Dried Basil: 1/2 tsp
- Zucchini: 1/2 cup sliced
- Mushroom: 1/2 cup sliced
- Garlic: 1 tbsp chopped
- Broccoli: 1/2 cup florets
- Paneer cubes: 1/2 cup
- Ketchup: 1 tbsp
- Milk: 1 cup
- Cheese: 1 tsp grated(optional)
- Seive the flours together for 2-3times.
- Heat little oil and roast the flour for 5-7 mins.
- Now put off the flame and let it cool down a bit.
- At this stage add milk and mix it so no lumps are formed.
- Switch on the flame and cook the sauce to a thick consistency while you add black pepper, salt and oregano in between.
- Now put a fresh pan and heat some oil and saute garlic till golden.
- Add all the vegetables and cook with salt, black pepper, chilli flakes and basil.
- Once its half done add ketchup and mix gently.
- Now take a baking bowl and layer the vegetables , sauce layer, then vegetables and sauce again.
- Sprinkle seasoning on top with grated cheese.
- Now bake this on 180 degrees for 15-20 mins.
- Serve with toast or anything you feel like.
