Spaghetti with Bean Sauce happened when it was raining hard and the menu pre decided was Rajma Chawal for this sunday. However my son was keen in having some paneer in it and since hubby was travelling I thought to use the opportunity to experiment a bit with my food. So that's when Spaghetti with Bean Sauce scored over Dahi Rajma (coming up soon) and then started my hunt for some nice zucchini.
I went to market just to fetch one zucchini, imagine how much I wanted to try this recipe of Spaghetti with Bean Sauce. Now Sundays if you are alone, cooking is the best way to keep yourself engaged. As i kept adding the seasonings my conviction towards the recipe grew and later when I had it with a glass of fruit punch, this Spaghetti with Bean Sauce just turned out to be yummy. Adding vegetable gave it crunch and beans kept the sauce thick and give a sift bite everytime. So incase you have some beans in pantry, its times to make some yummy bean sauce and try this recipe of Spaghetti with Bean Sauce
- Spaghetti : 1 cup boiled
- Garlic: 1 tsp chopped
- Coriander stems: 1 tsp chopped
- Tomato: 2 chopped
- Tomato sauce: 1 tbsp
- Black pepper: 1/2 tsp
- Chilli flakes: 1/4 tsp
- Oregano: 1/2 tsp
- Salt: as per taste
- Olive Oil: 1 tsp
- Boiled Beans: 3-4 tbsp
- Dry Basil leaves: 1 tsp
- Zucchini: 1/2 cup sliced
- Parmesan Cheese: 1 tsp grated
- Heat oil and saute coriander stems and garlic.
- Add tomatoes and cook with salt and black pepper.
- Now add some beans strained water and cook till tomatoes are done.
- Make a paste of this and pour it back in the pan.
- Add tomato sauce, chilli flakes, basil and oregano and cook for few mins.
- Now add beans and let it cook for a while.
- Separately grill or saute zucchini slices with salt and pepper.
- Now put the spaghetti on a serving plate and top it up with sauce and then zucchini slices.
- Garnish with some cheese and serve hot.
