Hara Bhara Uttapam is what got inspired by the name Hara Bhara Kabab and I loved teaming it up with some garlic chutney. So how I made it is interesting, started with some fridge hunting and getting some broccoli in place. I figured out that blanching broccoli and then grating the florets along with some basil gives an exotic taste to these Uttapam. Since I wanted to keep the oil balance in control using nonstick uttapam pans came out handy for me.
Not just the oil but the goodness which broccoli adds to this recipe makes it worth a try. Kids would love to have these beautiful green savory pan cakes while you would never give up on making them. These Hara Bhara Uttapam can be served for breakfast too with some hot chocolate and let everyone have this fulfilling meal with smiles.
- 1. Dosa Batter: 4-5 cups
- 2. Broccoli: 1/2 cup blanced & grated
- 3. Garlic: 2 cloves
- 4. Basil leaves: 10
- 5. Garlic powder: 1/2 tsp
- 6. Black pepper: 1/2 tsp
- 7. Salt: as per taste
- 8. Pasta seasonings: 1/2 tsp
- 9. Olive oil: 1 tsp
- Instructions
- 1. Make a paste of basil leaves, garlic, salt and olive oil.
- 2. Heat 2 drops of oil and cook broccoli along with the basil paste.
- 3. Spread the batter on a uttapam pan and add the broccoli on top and cook covered.
- 4. After 2 mins flip it and cook on the other side before serving it hot with chutney
