Peas Pesto Pasta, wasn't on my mind really when I actually made this first time. So one of these days while I was cooking my peas for breakfast and ended up having some leftover, that's when I thought to use them for lunch. Now for me Pasta is one easy and healthy lunch option most of the times. So with the left over cooked peas started my experiment and I used fresh basil leaves to cut down the pungent flavor of peas in pasta. Beauty of basil leaves is that it dominates the taste while you can add anything else to give a base.
While I made this Peas Pesto Pasta by the time I was half way, I realized that this would turn out to be really yummy.So in evening during snacks when I gave it to my son, he just loved it and that served the entire purpose of the experiment around trying something as different as Peas Pesto Pasta.
- Fresh Peas: 1 cup
- Garlic: 1 tbsp
- Basil leaves: 4-5
- Green chilli: 1
- Olive oil: 1 tsp
- Almonds: 7-8
- Milk: 1/2cup
- Cheese: 1 tsp
- Black pepper: 1/2 tsp
- Pasta seasonings: 1/2 tsp
- Boiled corn: 1/2 cup
- Salt: as per taste
- Paste: 1 cup
- Heat 12 tsp oil and saute garlic and then add peas and cook with some salt and green chillies.
- One its done add cooked green peas to a food processor with basil leaves, some more garlic, salt, almonds and some olive oil and make a fine paste.
- Cook Pasta in boiling water till almost done.
- Take a pan and stir fry boiled corns and add pesto paste.
- Some milk to cook it as a sauce and then add pasta.
- Add seasonings , black pepper and some cheese before serving it with garlic bread.
