Peas Pesto Rice is what I like to call it. No its not a peas pesto but infact a mint pesto along with the green peas which give nice contract to the while boiled rice when Peas Pesto Rice mixed together. The flavors are just amazing to keep you hooked with every morsel of the freshness loaded Peas Pesto Rice.
So one of these days while I was thinking of creating another interesting recipes I came across this thought of getting rice and pest together and make some twist to the regular tiffin box food for lunch. So all we need some handful of easily available ingredients and lots of love

Ingredients
- Boiled Rice:2 cups
- Onions : 1 chopped
- Peas: 1/2 boiled
- Mint leaves: 1/2 cup
- Almonds: 10
- Green chilli:1
- Garlic pod:6
- Parmesan cheese: 1 tsp
- Olive oil: 2 tsp
- Lemon juice: 1tbsp
- Salt: to taste
- Black pepper: 1 tsp
- Vegetable stock: 2 tbsp
Instructions
- Make a pesto paste out of Mint, garlic, parmesan cheese, green chilli, olive oil, lemon juice, salt and pinch of black pepper.
- Heat oil , saute onions , add peas and some salt and cook for 2 mins.
- Add this mint pesto paste and cook with some vegetable stock or water.
- Once the water dries a bit add the boiled rice and some back pepper and serve hot with some mocktail.
