Apple and Paneer Roll turned out to be one of the easiest lunch packs I would have made so far. Infact the beauty of these Apple and Paneer Roll is that it wasn't a thought through recipe but I just added what I could find handy and that's how apple became part it. VOILA!! I loved the end result for sure.
Offlate rolls have become my favorite and I love experimenting with them. This Apple and Paneer Roll has juicy paneer cubes and sweet crunch of apple along with nice spices. Indeed the spices make the flavors comes out well and that's when I realised how apple goes so well with light indian spices. Apple and Paneer Roll has the goodness of fenugreek along with the nutrition some vegetables and fruits. You can try this for your kids tiffin box or office lunch too but for that you have to read the recipe here.

- Wheat Flour: 1 cup
- Fenugreek leaves: 1/2 cup finely chopped
- Curd: 1 tbsp
- Salt: as per taste
- Paneer: 50 gms cubed
- Green Capsicum: 2 tbsp diced
- Onions: : 1 tbsp diced
- Tomatoes: 2 tbsp diced
- Apple: 2 tbsp peeled and diced
- Cumin powder: 1/4 tsp
- Pepper powder: 1/4 tsp
- Tomato Ketchup: 1/2 tsp (optional)
- Ginger garlic powder: 1/4 tsp
- Olive oil: 1/2 tsp
- Heat the oil in pan and add all the vegetables and saute for 2mins.
- Add paneer cubes and cumin powder, pepper powder , ginger garlic powder and salt.
- Give this a good toss and cook for a minute of medium flame.
- Add tomato ketchup and apple pieces and again saute it for 30secs before putting off the flame and keep the mixture aside.
- Now make a dough with fenugreek leaves , curd and wheat flour and then make chapatis out of it.
- Spread the mixture on the chapatis and make a roll and then pack it in aluminum foil and pack it in the fridge.
