Egg in Coconut CurryEgg in coconut gravy is as simple as it sounds and did I not say how tasty it is. You would love the spices mixed with coconut milk and its gives a nice flavor to the entire dish of Egg in coconut gravy. While the whole spices give a nice kick the sweetness of coconut milk helps in balancing the taste and that's where this Egg in coconut gravy tastes superb as compared to regular Egg curries.

So I am in love with Egg curries since I was a young girl but this Egg in coconut gravy was my new try. Apparently my husband isn't fond of egg curries so this was a treat to myself when he was on a trip. I made it enough spicy to make sure I get all the deserved pampering on my plate. Egg in coconut gravy turned out to be super yum and it tasted great as I added some boiled potatoes too. Now potatoes enhanced the taste for me, you can however keep it optional. Ingredients
  1. Boiled eggs: 2
  2. Boiled potato:1 cut in half
  3. Onion :1 chopped
  4. Tomato: 1 chopped
  5. Ginger Garlic Paste: 1 tbsp
  6. Bay leaf:1
  7. Green cardamom:1
  8. Cinnamon:1
  9. Cumin seeds :1/2 tsp
  10. Black pepper: 2-3
  11. Coriander powder: 1 tsp
  12. Turmeric powder: 1/2 tsp
  13. Red chilli powder: 1/2 tsp
  14. Cumin powder: 1 tsp
  15. Sugar: 1/4 tsp
  16. Salt: to taste
  17. Garam masala: 1/2 tsp
  18. Coconut milk: 1/2 cup
  19. Coriander leaves: 1 tbsp
  20. Oil: 1 tsp
Instructions
  1. Heat oil in a wok and let cumin seeds splutter.
  2. Then add all the whole spices like bay leaf, cinnamon, cardamom, black pepper and cook for 30 secs.
  3. Add onions and saute them brown before adding ginger and garlic and cook till raw smell goes.
  4. Now add tomatoes, sugar and salt to taste. Cook this till tomatoes are done with cumin powder, coriander powder, red chilli powder and turmeric powder.
  5. Now transfer this in a grinder and make a paste.
  6. Pour it again in the wok and add coconut milk and give it a good mix to make a thick gravy.
  7. Now add eggs and potato and cook it in the gravy for a while, you can shallow fry eggs and potatoes incase you want.
  8. Add some garam masala and coriander before serving it with roti and rice
