This Tomato Rice is a bliss when you are done with mundane eating.
Well so one of these days when I was thinking of fixing some lunch for myself during those working days and didn't wanted to settle with a quick sandwich, Tomato Rice was a perfect answer. Incase you don't know I work from home and that actually makes more sense to my cooking experiments, where I need to cook healthy food and that too in record time of 20 mins. How else would I manage my office work and food both? Coming to Tomato Rice again my twist is to give it a mint flavor which can be optional for you but the addition of capsicum does make it tastier.
I prefer my Tomato Rice to be spicy and and full of flavors , off-course tomato dominates but then little sugar helps in cutting the acidity of tomatoes. Now you might ask me about adding tomato in puree form apart from the chopped pieces, that's just to you have enough flavors as well as bite of tomatoes while you enjoy your Tomato Rice with raita and papad.
Infact if you add pav bhaji masala in your Tomato Rice , it would become even tastier but that would not purely be Tomato Rice. So it's upto you as to how you experiment with your food and get most out of your Tomato Rice.

- Boiled Rice: 2 cups
- Urad Dal: 1/2 tsp
- Channa Dal:1/2 tsp
- Mustard Seeds: 1/2 tsp
- Curry Leaves:6
- Capsicum: 1/2 cup chopped
- Red chillis:1
- Ginger Garlic Paste: 1/2 tsp
- Onions: 1 chopped
- Tomato Puree: 2 tbsp
- Tomato: 1 fine chopped
- Mint leaves: 3-4
- Salt: to taste
- Cumin powder: 1 tsp
- Red chilli powder: 1/2 tsp
- Garam masala: 1/2 tsp
- Sugar: 1/4 tsp (optional)
- Oil: 1/2 tbsp
- Heat oil and add urad and channa dal one by one for tempering.
- Now add curry leaves, mustard seeds and red chilli.
- Add onions and saute for 2 mins and then add ginger garlic paste.
- At the stage add capsicum and then chopped tomatoes and sugar and cook till its soft and mushy.
- Now add salt, cumin powder and cook till its done.
- Add tomato puree and cook for another 2 mins.
- Now add garam masala and mix cooked rice and mint leaves and cover and cook for 2-3 mins.
- Now put of the flame and let rice soak the masala.
- Serve with raita and papad.
