Well my son just said WOW when he looked at Pasta in Beetroot Sauce on his plate. The best part of Pasta in Beetroot Sauce is its texture and color which makes it very attractive. Apart from taste this Pasta in Beetroot Sauce adds the nutrition too in the pasta and that too without even anyone realise the ingredients.
So why I made this Pasta in Beetroot Sauce? Reason was its otherwise next to impossible to make my family eat Beetroot and hence I have to keep camouflaging it and that's when one day I thought of Pasta in Beetroot Sauce. Adding carrot not just increased the nutrition but also helps in cutting down the strong flavor of Beetroot. So Pasta in Beetroot Sauce comes out dark pink with subtle taste of creamy sauce.Try out this Pasta in Beetroot Sauce and enjoy the new taste yourself.
- Beetroot: 1
- Carrot: 1/2 cup diced
- Garlic: 6 cloves
- Onion: 1 chopped
- Black Pepper: 1/2 tsp
- Oregano: 1/2tsp
- Basil leaves: 4
- Parmesan Cheese: 1/2 tsp
- Milk: 1/2 cup
- Vegetable stock: 1/2 cup
- Salt: to taste
- Olive oil: 1/2 tsp
- Boiled Pasta: 1 cup
- Boil beetroot with diced carrots and two garlic for 10 mins.
- Roast (on pan or microwave) 4 cloves garlic and then puree boiled vegetables and roasted garlic.
- Heat oil and saute onions for 2 mins and then add vegetable puree.
- Cook for 1 min and then add veg stock, salt, black pepper and oregano seasoning.
- Now mix milk and cook till its reaches a consistent thickness.
- Add boiled pasta and top it up with Parmesan cheese.
- The quantity of cheese is optional here and as per taste.
