Cauliflower Alfredo Pasta

Cauliflower Alfredo pasta, sounds little weird. Isn't it?

Well when I first thought of using cauliflower in Alfredo pasta , I felt as I have lost it. Cauliflower? Really?

But then I again thought of trying out this recipe of Cauliflower Alfredo pasta which was just in my imagination. Then started my hunt to look for something similar and incase someone has already tried. So I came across a recipe on Pinterest which did something similar and then I added my touch to make this Cauliflower Alfredo pasta.

To my surprise the recipe turned out to be really superb and I was just wondering that how can cauliflower be so tasty and why did I not try this amazing no oil, no cream, no flour sauce till now.

Ingredients
  1. Cauliflower : 1 small
  2. Boiled Pasta : 1 cup (your choice)
  3. Garlic: 10 cloves
  4. Black pepper: ½ tsp
  5. Red pepper:1/2tsp
  6. Salt: to taste
  7. Oregano: 1 tsp
  8. Milk: 1 cup
  9. Oil: 1 drop
  10. Coriander : 1 tsp chopped
Instructions
  1. Boil cauliflower in water and cook it till its done and keep aside.Retain the water.
  2. Sprinkle on drop oil on garlic and roast in oven or pan.
  3. Now make a smooth puree of cauliflower with roasted garlic , water and pour in a wok.
  4. Cook the paste of 2 min and add milk gradually till you get a smooth sauce.
  5. Now add seasonings and keep mixing it well.
  6. Add the sauce to the boiled pasta and serve hot with coriander on top
