 Stuffed Eggplant

Stuffed Eggplant is an interesting twist to my regular brusettas and its pretty much needs similar preparation too.Stuffed Eggplant is delicious and full filling to eat. I happened to see a similar recipe on Living foods Vikipedia and that's where go an idea to prepare Stuffed Eggplant this way.

Though it goes well with garlic bread but I sometime have it with my regular indian dal chawal and enjoy it as a side dish. Stuffed Eggplant is a good way to make your family fall in love with eggplant/brinjals. Time to try your hands on this yummy Stuffed Eggplant.

Ingredients
  1. Long Brinjal:1
  2. Garlic: 4 cloves chopped
  3. Onion: 1 chopped
  4. Tomato: 1 chopped
  5. Capsicum:1 chopped
  6. Red pepper: 1/2 tsp
  7. Black pepper:1/2 tsp
  8. Oregano:1/2 tsp
  9. Green chilli:1 chopped
  10. Cheese: 2 tbsp grated
Salt: to taste
  1. Oil: 2 tsp
Instructions
  1. Take the brinjal and spilt in two and spread 1 tsp oil evenly over both the halves.
  2. Sprinkle black pepper and salt and bake it for 20 mins on 180 degree C
  3. Now take out the brinjals and scoop out both the halves from the core and keep the jackets aside.
  4. Heat oil in a pan and add garlic, green chilli and then onions and saute it golden.
  5. Add tomatoes and cook it for 5 mins.
  6. Now add capsicum and cook it for 2 mins and add salt, red pepper, black pepper and later oregano.
  7. To this mixture add the scooped out brinjal and cook it for 2 mins.
  8. Now stuff this mixture into the brinjals and grated some cheese and bake in to 5 mins on 180 degrees and serve hot with garlic bread.
