Jhatpat Paneer

Jhatpat Paneer is what I love to call it. The reason being whenever my son asks me to make Paneer on a working day , Jhatpat Paneer comes to my rescue. Now that I have made it so many times that the entire recipe is at the back of my mind. I can make Jhatpat Paneer anytime of the day and its simple too. Now though its easy it also depends a lot on how well the Paneer is cooked and the proportion of masalas added. However on those busy and crazy work schedule days Jhatpat Paneer is all what you want.

Ingredients
  1. Paneer: 200 gms cut in cubes
  2. Tomato: 1 big
  3. Ginger: 1 inch
  4. Green Chilli:1
  5. Bay leaf:1
  6. Cumin seeds: ½ tsp
  7. Curd: ½ cup
  8. Coriander leaves: 2 tbsp
  9. Coriander powder: 1 tbsp
  10. Red chilli powder: 1/2tsp
  11. Turmeric Powder: ½ tsp
  12. Cumin Powder: 1 tbsp
  13. Sugar: 1 tsp
  14. Garam masala: 1 tsp
  15. Salt: to taste
  16. Oil: 1 tsp
Instructions
  1. Make a paste of ginger , green chilli and tomato
  2. Heat oil in a wok and add bay leaf and cumin seeds and once they splutter add the tomato ginger paste and sugar.
  3. Cook the tomato paste till it leave oil and then add all dry masala like coriander powder, red chilli, cumin and garam masala and cook for 2 mins,
  4. Add chopped coriander in yoghurt and mix it in the wok.
  5. Now give the whole thing a good mix and let it cook for sometime.
  6. Add little salt and and paneer cubes and water incase it is too thick.
  7. Cover the wok and let the masalas seep into the paneer and serve hot with Roti or Naan.
