Spongy Khaman Dhokla is a famous gujarati snacks which is relished in all parts of India now. Spongy Khaman Dhokla is prepared in Gujju families almost everyday for breakfast or as a accompaniment to satisfy for tea time hunger . Spongy Khaman Dhokla is one of the best oil free snacks which anyone could enjoy guilt free anytime. The soft and spongy Khaman Dhokla are everyone favourite,infact  if the a Khaman Dhokla is not spongy then wont taste that good hence we thought of calling it Spongy Khaman Dhokla itself. It should be so soft that spoon should just slip in it. After some trail and error and some bit research I got this perfect recipe for getting prefectly made soft and Spongy Khaman Dhokla.

Ingredients
  1. Besan/Gram Flour Flour:2 cup
  2. Yoghurt:1 cup
  3. Water:1/2 cup
  4. Ginger- green chilli paste:1 tbsp
  5. Oil:1 tbsp
  6. Asfotedia: 1 pinch
  7. Turmeric powder:1/2 tsp
  8. Salt as per taste
  9. Sugar as per taste
  10. fruit salt or eno:1 tbsp
  11. black mustard seeds :1 tbsp
  12. Green chillies slit:3-4 medium
  13. Water: 1 cup
  14. Coriander leaves chopped:1/4 cup
  15. Lemon juice:1
Instructions
  1. Take a bowl add besan, salt, sugar, turmeric, hing and mix well with a whisker.
  2. In a separate bowl add the curd, oil, ginger-chili paste and water and mix well.
  3. Add the liquid to the besan and whisk continuously to form a lump free batter.Now grease a microwave safe dish and set aside.
  4. Add the eno fruit salt to the batter and give a final mix . Immediately transfer the batter on to the greased dish.
  5. Microwave the batter for 4 minutes at high. Insert a fork in the center of the dhokla. If it comes out clean then it is done or else microwave for 1 more minute.
  6. Carefully take the dish out from the microwave and set it aside and meanwhile prepare the tadka/tempering.
  7. In a small pan heat oil and add the mustard seeds. When the seeds start to splutter add the green chillies and curry leaves and lightly sauté in the oil.
  8. Now add 1 cup of water mix with lemon juice very carefully and finally add the sugar.
  9. Let the mixture cook for couple of minutes.
  10. Add all of the tempering to the cooked dhokla and let the dhoklas soak for few minutes.
  11. Garnish with chopped coriander leaves and serve it with any chutney of your choice.
