Arbi Masala has been my favorite since I was a kid. Offcourse though I learnt it quite later while I was learning all the cooking post my marriage. So Arbi masala is was something I learned from one of my office colleage who use to get it quite often in her tiffin.
She helped me with the recipe and I twisted it a bit and since then have been following it uptill the T.Arbi Masala is a slow cooked recipe and I mostly use mustard oil which goes well to give the required flavour to Arbi Masala. Also you can add gramflour too ,however I like it more without that. So the days we have Arbi Masala my husband is happiest.Since my family loves it so much I not just make it quite often but try it in non stick pans only so can get the crispiness without much oil.
So what are we waiting for, following next is the recipe for Arbi Masala.
- Arbi: 250 boiled and peeled
- Mustard Oil: 2 tbsp
- Carom Seeds: ½ tsp
- Green Chilli: 1 chopped
- Coriander powder: 1 tbsp
- Cumin powder: 1tbsp
- Turmeric powder: 1/2tsp
- Red chilli: 1/2tsp
- Mango Powder: 1/2tsp
- Lemon: few drops
- Asafoetida: 1 pinch
- Salt: to taste
- Heat oil and when it is heated, add asafoetida, carom seeds and green chilli.
- Lower the flame and add all masala like coriander, cumin, turmeric and then salt.
- Now add boiled arbi pieces which are cut in 1 inches pieces and give it a good mix.
- Now keep turning the arbi till it becomes reddish brown from all the sides.
- Add drops of lemon and serve hot arbi masala with garnish of fresh coriander
