Baked Corn and Spinach Paneer

Baked Corn and Spinach Paneer is actually an offshoot of my original Baked Vegetable recipe and when one of the weekend’s I has just spinach at home so I thought of using some frozen corn and paneer to create this yummy dish of Baked Corn & Spinach Paneer.

Best part was since two of them didn’t require much of chopping and spinach needed to be blanched I found it quite cook fix. Offcourse the main aspect of any baked dish including our Baked Corn and Spinach Paneer is the sauce and we kept the seasonings simple yet enough to bring out the flavors. Now Baked Corn and Spinach Paneer interested my hubby too and when he came to know that his favorite Baked Vegetable is getting a twist he was quite excited and thankfully it turned out good enough to keep him asking for more. So though I didn’t start with my choiced vegetables but the end result of cooking Bakes Corn and Spinach Paneer wasn’t bad.

Ingredients
  1. Onions: 1 chopped
  2. Corn Kernels: 1 cup boiled
  3. Paneer: 200 gms cut in cubes
  4. Spinach: 20 leaves blanced and chopped
  5. Garlic: 5 to 6 cloves finely chopped
  6. Salt: to taste
  7. Pepper: ½ tsp
  8. Red chilli flakes: ½ tsp
  9. Cumin powder: 1 tsp
  10. Butter: 2 tsp
  11. Refined Flour: 2 tbsp
  12. Milk: 2 cups
  13. Cheese: 1 cube
  14. Tomato Ketchup: 2 tbsp
  15. Oil: 1 tsp
Instructions
  1. Heat oil in wok and sauté chopped garlic and then onions till they are translucent.
  2. Add corn, spinach, salt and sauté
  3. Now add Paneer pieces and cook it with vegetables.
  4. Once all the water evaporates add pepper , cumin powder and red chilli flakes and cook for another 5 mins.
  5. Separately in a different wok heat butter and add refined flour. Roast the flour till it turns brown.
  6. Once it is brown let it cool down and then add milk mix it with beater and then start the flame.
  7. Gradually the sauce thickens but keep mixing it to avoid any lumps.
  8. Add salt and pepper to the sauce. After that add grated cheese to it and sauce is ready.
  9. Now add ketchup in the vegetables and then mix the white sauce in the vegetables and cook for 5 mins.
  10. Now pour the vegetables in a baking bowl and on the top add grated cheese
  11. Put this for baking at 180 degrees for 20 mins. Serve hot with garlic bread.
