He came home quite late that day. I was waiting for him on the dinner table and remember opening the door with the excitement to have him back home. But he seemed to be preoccupied in his thoughts and hardly noticed my smile.
He looked tired but then seems had a call to attend starting in next 5 minutes. I felt bad for him and wished I could have made him happier. As he went in the study room to attend to his call I thought to make a quick surprise for him.
Wheat Jaggery Halwa has always been his favorite and since last 10 years whenever I want to make a quick sweet for him that’s my recipe. My hubby just loves Wheat Jaggery Halwa courtesy our North Indian roots where we all have fond memories of Atta Halwa akka Wheat Jaggery Halwa. Now this is a rich halwa as this requires lot of ghee but then adding jaggery just beats a bit of guilt you have. However when it’s your favorite food then counting calories is not the preferred option.
And yes did I mention that it did make him smile and that broad smile with those gleam in his eyes which expressed so many mixed emotions, while he enjoyed ‘Wheat Jaggery Halwa’ made all the efforts worthy J
You should try this simple recipe which is a sure shot hit anytime.
- Wheat Flour: 2/3 cup
- Ghee/Clarified Butter: 1/2 cup
- Raisins: 2 tbsp
- Almonds: 1 tbsp sliced
- Cardamom powder: 1 tsp
- Jaggery: grated 1 cup (depending on the desired sweetness)
- Heat ghee in a wok and mix wheat flour in it and roast it on low flame.
- Let it the ghee mix evenly and flour get roasted till its brown and also gives a nice aroma of roasted flour. This would take good 20 to 25 mins and is the main part of making this halwa hence be patient.
- Now add half of the raisins and let it cook with the flour for another 5 minutes.
- Now put off the flame and let the halwa cool for 2 to 3 minutes.
- Pour 1.5 cup of water and mix evenly in order to avoid any lumps.
- Simultaneouly mix grated jaggery and give it a good mix.
- Once its mixed well put on the flame and cook it while adding cardamom powder and as you cook more you would see the halwa leaving the sides of the wok.
- Add sliced almonds and rest of raisins and serve hot.
