This is my mom’s recipe and infact the first thing which I learnt from her, while I was on a 15 days cooking crash course just before my marriage. Infact this recipe of Vegetable Kadhi helped me earn lot many brownie points from my inlaws side and I am still asked to prepare this one when we all meet.
It’s a simple recipe but the beauty is that unlike north indian pakora kadhi you can easily replace deep fried pakoras with your choiced vegetables. It’s a great lunch option for a lazy Sunday when you just can easily avoid lots of cooking with one fulfilling and equally yummy dish. Vegetable Kadhi doesn’t take much time if you use frozen vegetables, however for the raw version you would need couple of more minutes to cook. Also while you add gram flour , I prefer adding one spoon at a time and mixing it well and then gradually add more till I finish the entire measurement. This makes sure that flour is cooked well and doesn’t have a raw taste. So cutting the long story short let me quickly share the recipe here:
- French Beans: 100 gms chopped
- Carrot: 1 chopped
- Cauliflower: ½ cup florets
- Peas: ¼ cup
- Onion: 1 sliced
- Garlic: 1 tsp chopped
- Tomato: 1 chopped
- Curry leaves: 10
- Besan: 3 tbsp
- Cumin Powder: 1 tsp
- Red Chilli: 1tsp
- Green Chilli: 1 split
- Salt: to taste
- Mustard Seeds: 1 tsp
- Mustard oil: 1 tbsp
- Ghee: 1 tsp
- Curd: 1 cup
- Heat mustard oil and add Asafoetida, add green chillis, mustard seeds and curry leaves.
- Add garlic and sauté for two mins and then add onions and sauté till its golden.
- Now add all chopped veggies apart from tomatoes and add salt ,turmeric powder, cumin powder and mix well and cook covered.
- Once vegetables are done add tomatoes and then add gram flour and mix it well.
- Now cook till all vegetables are coated with besan well.
- Take yoghurt and add 4 cups of water and mix well.
- Now pour this in the wok and mix well till the kadhi boils and till it gets a uniform consistency.
- Now heat ghee and some mustard seeds, curry leaves and add on to the kadhi served hot with rice
