Sweet Corn Soup

Sweet Corn Soup has always been my safest best after tomato soups. However sometimes some restaurants do disappoint me when it comes to making of such a simple soup. Simple!! Yes it is quite simple. I mean now I wonder why did I ever got into soup mixes when making them not just has been hassle free but extremely nutritious. I generally love having lots of it for dinner with some toast when I am all alone for dinner. Nothing beats having it when it’s raining outside and inside you are enjoying the flavors of corn with mild spices.

Another very interesting aspect in this recipe is that when you grind it to paste make it as smooth as you want to soup to be, I prefer some bites in my soup so keep it likewise. So what are we waiting for let me quickly share this interesting and super delicious recipe of Sweet Corn Soup

Ingredients
  1. Sweet Corn : 1 cup boiled
  2. Vegetable stock: 1 cup
  3. Milk: ½ cup
  4. 1 tsp: butter/oil
  5. Garlic: 1 tsp chopped
  6. Spring onions: 2 tbsp chopped
  7. Salt:as per taste
  8. Black pepper: ½ tsp
Instructions
  1. Blend boiled corn in a mixer to a thin paste.
  2. Heat oil in a pan and add garlic and once it turns brown add spring onions.
  3. Saute onions for 2 mins and then add corn paste and cook for 2 mins.
  4. Add salt and pepper and cook for another one minute before adding vegetable stock.
  5. Now add some water and make it to the consistency of your choice and let it boil for 2 to 3 minutes.
  6. At the end add milk and after one boil serve it hot.
