As a kid I never liked leafy greens addition and now when I think back I wonder how difficult it would have been for my mom to make sure I get proper nutrition. However the only green I ever preferred was Palak Paneer and that acted as some savior for her apart from some soups which she use make me have.So when I tried my experiments with mushroom and I saw my son not appreciating mushrooms that much I thought to add some spinach to it to add a different flavor of Palak Mushroom.He apparently likes spinach more than mushroom and it did help a bit.However I also ended up making a new dish which was quite liked by other family members.
I had never tasted Palak Mushroom before this so the dependence on the sample recipe was quite high however luckily it turned out good enough to be quoted on my blog. You can try this out and taste it for
- Spinach: 1 Bunch chopped
- Onions: 1 chopped
- Ginger : 1 tbsp
- Garlic: 1 tbsp
- Tomatoes:1 chopped
- Green chilli:1
- Pepper corns: 4
- Cinnamon:1
- Cloves:3
- Bay leaf:1
- Cumin seeds: 1 tsp
- Mushroom : 200 gms diced
- Oil: 1 tbsp
- Coriander powder: 1 tsp
- Turmeric powder: 1tsp
- Cumin powder: 1 tsp
- Red Chilli powder: 1tsp
- Cream: 2 tbsp
- Salt: to taste
- Heat oil in a wok and add Bay leaf, cinnamon, pepper corns, cloves, green chillis and ginger garlic.
- Once garlic turns brown add onions and sauté it for 2 minutes and then add chopped spinach.
- Cook it with little salt for 5 minutes and then cool the mixture and grind it in a smooth paste
- Now in a wok add oil and splatter cumin seeds and then add mushrooms.
- Saute mushrooms for 2 mins and add salt, coriander powder, turmeric powder, red chilli ,cumin powder and cook for another two minutes.
- Now pour palak mixture and cook it for 5 minutes.
- Add cream and serves hot with Tandoori Roti or Naan.
