I once had this onion cheese soup at one of the popular food joints in Mumbai and since then wanted to try it out at home. Searched many recipes and since it an Italian dish the seasonings etc was getting difficult.Then I came across this Tarla Dalal recipe of Onions Cheese Soup and I knew that it would taste just the way I wanted. Again a super quick dish to prepare and an ideal soup during monsoons or early winters. Here as much dark the onions would be while you sauté the soup would be equally dark.
My son loved this Onion Cheese Soup and it came a good change of taste for all of us and infact goes very well with some garlic bread or any some Pasta. It can also be a good trail for a weekday cooking where you don’t have to get into the hassle of vegetable stock etc to prepare for the soup.
- Onion: 1 large sliced
- Butter: 1 tsp
- Processed cheese: 1/2cup grated
- Salt: to taste
- Pepper: 1/2tsp
- Bread: 1 toasted
- Butter:1/2 tsp
- Water: 3 cups
- Heat oil in a pan and add onions slices
- Saute till they are golden brown and then add cheese and 3 cups of water
- As it starts boiling add salt and pepper too and cook it for 2 to 3 mins.
- Now cut bread in small squares and put butter on it and keep some grated cheese.
- Put the bread square in the serving soup bowl and over hot soup over it and serve.
