Paneer Jalfrezi

He loves Paneer!!

Yes my son can have it every day without any complains. So now that’s gives me enough opportunity to experiment and try out different recipes and combinations to make Paneer. This Paneer Jalfrezi which actually means stir fried Paneer in Vegetables is one of the mix and match recipes. Where I wanted me add spinach to enhance color of the dish also the catch is not to cover and cook. It has to be stir fried hence everything has to be cut in fine juliennes and not also we need to make sure not to overcook. Paneer Jalfrezi tastes best when served hot and has good flavors of tomato, spinach and if you wish you can add some capsicum too.

Since my son is not fond of capsicum I avoided but it would enhance the taste more. So some let’s start cooking Paneer Jalfrezi

Ingredients
  1. Paneer: 200 gms cut in 2 inch long pieces
  2. Onions: 2 medium sliced
  3. Tomatos: 1 medium sliced into thin strips
  4. Capsicum: ½ medium sliced Juliennes (optional)
  5. Spinach: 10 leafs chopped
  6. Garlic: 6 cloves fine chopped
  7. Chilli: 1 chopped
  8. Cumin seeds: 1 tsp
  9. Cumin powder: 1 tsp
  10. Salt: to taste
  11. Kitchen King powder: 1tsp
  12. Red chilli powder:1/2 tsp
  13. Oil: 1 tsp
Instructions
  1. Heat oil in a wok and add cumin seeds and let it crackle .
  2. Add chopped garlics and once they turn brown add onion slices and let it turn light brown only.
  3. Now add capsicum and tomatoes slices and sauté it on medium flame.Please note not to over cook any of these.
  4. Now add cumin powder, red chilli powder, kitchen king and salt.
  5. Add spinach and cook for 2 mins again on medium flame.
  6. Now mix paneer pieces and mix well till all the vegetables and paneer is uniformly coated with masala.
  7. Please note not to cover the lid while you cook as it would change the color of vegetables.
  8. Serve hot with Naan or Phulkas.
