As we were getting ready for the day care he said ,”Mumma , I want to eat paneer for lunch today.”
Now I looked at the clock and I had a meeting starting in just another hour and the first instinct was to say no but then suddenly it striked me that may be it can try some super fast recipe.
Now I always keep frozen paneer for such days but puree had finished but it wasn’t a challenge since I used grinder to make fresh puree and within 15 mins my Paneer Makhani was ready.Offcourse I used Nestle cream but otherwise I would have used milk malai too.
I had tweaked some recipe I had read long back and with cream an tomato sauce the flavours came absolutely stunning.However most importantly I could manage to get that beautiful smile on his face. Since then I tried it many times when my maid would take an off or I am tired but still want to do some quick cooking and everytime I loved it equally.
- Paneer: 200 gms
- Tomato: 2 medium pureed
- Ginger Paste: 1 tbsp
- Garlic Paste: 1 tbsp
- Green Chilli: 1 chopped
- Tomato Sauce: 1 tbsp
- Salt: to taste
- Sugar: ¼ tsp
- Cumin seeds:1 tsp
- Cumin powder: 1 tsp
- Turmeric powder: 1 tsp
- Garam masala: 1tsp
- Coriander powder: 1tsp
- Kasoori methi: 1 tbsp
- Cream: 2 tbsp to ½ cup
- Oil: 1 tsp
- Heat oil in a wok and add cumin seeds and let it crackle.
- Add ginger and garlic paste with green chillis and sauté it till its light brown.
- Add tomato puree , sugar and cook if for 2 to 3 mins.
- Now add turmeric powder, salt, cumin powder, coriander powder and cook till the masala is done.
- After masala is cooked add tomato sauce along with kasoori methi and cook it for another 2 mins.
- Now add cream and mix it well after which add paneer cubes.
- Let paneer cook with the masala for 2 mins while you can add garam masala at this point and cover the lid and cook it for another 5 mins.
- Incase your gravy is too thick you can add water too.
- Serve hot with Naan or hot phulkas
