Baked Vegetables

Baked Vegetable got me hooked!!

Wondering how? So here is the story…Mine is an arranged marriage and I offcourse had to meet lot many prospective grooms before I found my husband. Trust me it’s not 10% easy as it sounds however like they say hard work pays , I echo the thought now.

So this was when my husband and his family had come first time for lunch at our place and my mom had instructed me to be as good host as I can. Now I off course was still in college and cooking was nowhere close on my cards. So all I could do was serve and pretend that I know it all. Now considering my mom’s excellent cooking everyone was just engrossed on the lunch table. When suddenly my husband praised my mom for all her hard work and specially that ‘Baked Vegetable’ which he took multiple helpings (yes, I was counting ;)). From that day I knew way to his heart is ‘Baked Vegetable’.

We got married after an year of this lunch and baked vegetable went somewhere in deep memory when someday I was going through the old album and it striked me. So here is how I refreshed my memory …

Ingredients
  1. Spring Onions: 2 chopped
  2. Mushroom: 100 gms chopped
  3. Corn Kernels: 100 gms boiled
  4. Broccoli: 100 gms
  5. Paneer: 50 gms
  6. Spinach: 10 leaves chopped
  7. Salt: to taste
  8. Pepper: ½ tsp
  9. Butter: 2 tsp
  10. Refined Flour: 2 tbsp
  11. Milk: 2 cups
  12. Cheese: 1 cube
  13. Tomato Ketchup: 3 tbsp
  14. Tomato: 1 Sliced
  15. Oil: 1 tsp
Instructions
  1. Heat oil in wok and sauté spring onions till they are translucent.
  2. Add broccoli , mushroom, corn, spinach, salt and sauté
  3. Now add Paneer pieces and cook it with vegetables.
  4. Once all the water evaporates add pepper and cook for another 5 mins.
  5. Separately in a different wok heat butter and add refined flour. Roast the flour till it turns brown.
  6. Once it is brown let it cool down and then add milk mix it with beater and then start the flame.
  7. Gradually the sauce thickens but keep mixing it to avoid any lumps.
  8. Add salt and pepper to the sauce. After that add grated cheese to it and sauce is ready.
  9. Mix the sauce in the vegetables and cook for 5 mins. Now add ketchup in the vegetables.
  10. Now layer the vegetables in a baking bowl and on the top add tomato slices , grated cheese
  11. Put this for baking at 180 degrees for 20 mins. Serve hot with garlic bread.
