Thank you Maa, for this wonderful recipe of Khasta Papdi which will stay with me forever.
Khasta Papdi is a dish very close to my heart and always reminds me of the my golden childhood days spend my Nani's place. Kasta Papdi was one of the most popular local breakfast foods then and I still remember how the Halwai( sweet shop owner) would start making it from morning itself and how people would queue at his shop to make sure they get there hands on the hot from the wok Khasta Papdi. Every morning my Mama(uncle) use to bring this special breakfast for us and we as kids would just end up finishing it as fast as we could.
However back home we since we didn't get Khasta Papdi out in shops ,Maa made sure that she would cook it at home on Sunday mornings. I always used to look forward for those Sundays and till date its one of my favourite breakfast options. Her recipe of Khasta Papdi which she eventually passed on to me is by far the most full proof recipe for the same with the real crunch that a Khasta Papdi needs with none better companion Aloo ki Sabji.
After lot many attempts I finally learned to make perfect this Khasta Papdi just like how my Maa made but then that touch of her love is irreplaceable.
- For Khasta Papdi
- Refined Flour(Maida): 1 cup
- Oil: 2 tbsp
- Salt: as per taste
- Carom seeds :1 tsp
- For Aloo ke sabzi
- Boiled Potato : 4
- Green Chilli: 1 chopped
- Cumin seeds : 1tsp
- Salt: as per taste
- Coriander powder: 1 tbsp
- Turmeric powder: 1tsp
- Red Chilli Powder: 1/2 tsp
- Garam Masala Powder: 1 tsp
- Dry Mango Powder: 1 tbsp
- Oil: 1 tbsp
- Khasta Papdi
- Mix all the above ingredients together and make a soft dough ( not much soft).
- Cover it and keep it aside for 15 min, then make small balls out of it.
- Roll these balls like roti although small in size.
- Roll them as much thin as u can as it will help u maintain crispiness .
- Now with the help of fork or knife make small holes or lines in it so that these do not puff up like poori.
- Now deep fry them in hot oil and khasta papdi is ready.
- Aloo Sabji
- Take a kadhai and heat oil in it.
- When the oil start heating up add cumin seeds, hing and let it crackle.
- Then add all other spices as specified and then add boiled and slightly mashed potatoes.
- Give this a good mix .
- Please note for this sabzi, green chillies and partially mashed potatoes are must to retain the exact taste and texture what you get in market .
- Serve this with cup of hot tea and enjoy this heavenly breakfast.
