Green Egg Roll is my goto recipe whenever I want to enjoy Kolkata rolls and without indulging in junk food. These Green Egg Roll not just make your meal scrumptious but are loaded with nutrition and goodness. The crunchy vegetables with the soft and fluffy base tastes great. Infact you can cut it in small pieces and present like spring rolls too, something you can serve your guests with some interesting dips.

Green Egg Roll is my family's favorite too and I love it also because it is high in protein, iron and vitamins. You must try this super easy Green Egg Roll and let you loved ones enjoy its taste. As an alternative you can add some chilli sauce along with tomato sauce as well.

Ingredients
  1. Whole wheat flour: 1 cup
  2. Curd: 2 tbsp
  3. Spinach Puree: 2 tbsp
  4. Egg: 1
  5. Salt: as per taste
  6. Black pepper: 1/2 tsp
  7. Onion: 1/2 cup sliced
  8. Carrots: 1/4 cup sliced
  9. Capsicum: 1/4 cup sliced
  10. Cabbage: 1/4 cup sliced
  11. Ginger: 1 tsp grated
  12. Lemon juice: 1 tsp
  13. Honey: 1 tsp
  14. Tomato Ketchup: 1/2 tsp
Instructions
  1. Mix spinach puree, curd , salt in wheat flour and knead it in a soft dough.
  2. Take a bowl and add lemon juice, ginger, black pepper, salt and all the vegetables.
  3. Roll a paratha and put it on the girdle and then flip it.
  4. Now take a egg and beat with some pepper and salt and gradually pour it over the paratha to let it make a thick layer.
  5. Once the egg layer solidifies flip the paratha and cook it from the egg side too for few mins.
  6. Now turn it back with the egg side up and spread some ketchup and keep the vegetables on one side and then roll it up.
  7. Wrap in an aluminium foil and serve.
