While we asked some awesome moms from Ovenderful Mom Bakers Community to do some healthy baking with their little ones..the results were yumsome.

#CookWithRD…..My 4.5 year old daughter is always ready to help me in kitchen but it is me who always do not allow her as i thought she will make it messy and increase my work load…Thanks to this contest whereby she gets the chance to bake with me and i got to know that actually she helped me and did not make things messy?….
Today evening we both tried and experimented the very much healthy “Whole Wheat flour & Carrot Nankhatai and i loved the way she helped me….here goes the recipe

Whole wheat flour & Carrot Nankhatai

Ingredients

whole Wheat Flour 1 cup
Gram flour (besan) 1/2 cup
Rava (sooji) 1/2 cup
Ghee 1/2 cup
Castor sugar 1 cup
Grated carrots 1 cup
Yogurt 1/4 cup
Cardamom powder 1 tspn
Baking powder 2 tspn
crushed pistachios a spoonful

Method
Preheat the oven @ 180 degree.
Add grated carrots, whole wheat flour, gram flour, rava, ghee, cardamom powder, baking powder, yogurt & castor sugar into a deep large bowl.
First mix it spatula to bring it together and then use your hands to bring it to a rough dough form.
Refrigerate the dough for half an hour.
Remove the chilled dough and prepare small balls, give it shape of nankhatai and place them on the baking tray.
Sprinkle few crushed pistachios on it and bake at 180 degrees for 22-25 minutes or untill done.
Allow it to cool and enjoy.

I purposefully kept the shape rough than the usual smooth finish of nankhatai as i love this kind of outcome. The goodness of whole wheat flour, gram flour and rava and the nutrition of versatile vegetable carrot makes it healthy.
