Quinoa Jelly Cake was experimental but since I was working on Diwali recipes, I thought to try out something with Quinoa. Now incase you don't have Quinoa , just replace it with Daliya or even Suji Halwa and it would come out equally nice.

This Quinoa Jelly Cake actually helped me make my son eat Quinoa without much fuss and it being a super food you would definitely want to add it to your meal menu. Quinoa provides a nice grainy texture to the entire recipe while the softness of jelly just makes it super tempting. You can add two colored jelly two and let your kids enjoy this yummy Quinoa Jelly Cake.

Ingredients
  1. Rasberry Jelly Mixture: 1 pack
  2. Quinoa: 1 tbsp soaked in water for 15 mins
  3. Jaggery: 1 tbsp
  4. Cardamom Powder: 1/4 tsp
  5. Almonds Powder: 1/2 tsp
  6. Ghee: 1/4 tsp
Instructions
  1. Roast quinoa in ghee for 5 mins and then add 1 cup water and pressure cook it till its done (mostly 3-4 whistles)
  2. Now add jaggery and cook it till water evaporates and then add some almonds powder and cardamom in it and keep aside.
  3. Now boil water and follow packet instructions to make jelly.
  4. Take a mould and make a layer of quinoa and then pour jelly over it.
  5. On top of it sprinkle almond powder and keep it in refrigerator for 30 mins.
  6. Once jelly sets de-mould the Quinoa Jelly Cake and serve chilled.
