Boondi Parfait!!

Sounds Interesting. Isn't it?

Well I loved it..and so did my tasting team which is mostly my husband and my 6 year old. For anyone who is a Boondi lover..can't say no to this one. Now the trick it that boondi itself is quite sweet and heavy so we teamed it up with hund curd which balances the richness of the boondi and also add a nice tangy flavour to the whole dessert. 

So for people who love fusion dessert and want something interesting this Diwali..this is a sure shot recipe. However trick is to use fresh yoghurt which is less sour..in order to get the perfect creaminess as well as tecture of the final dish.

Boondi Parfait would be something you must try and feel free to add some variations of dry fruits and fresh fruits too.

Ingredients
  1. Boondi: 1/2 cup
  2. Hund curd: 1 cup
  3. Muesli: 2 tbsp
  4. Milk: 1/4 cup
  5. Honey: 1 tbsp
  6. Kesar Masala Powder: 1 tsp
  7. Cardamom Powder: 1/2 tsp
Instructions
  1. Boil milk and add 1 tsp boondi and cook till its soft and milk evaporates a little.
  2. While you are making hung curd, mix the curd with honey and then put through the sieve for 2 hrs.
  3. Now take a serving bowl, and add a layer of roasted muesli , then boondi and milk mixture.
  4. Mix kesar masala powder in the hung curd and taste if its enough sweet or add little honey.
  5. Now sprinkle some cardamom powder on the milk and boondi layer and then add the hung curd layer.
  6. Last top it up with boondi and some almonds powder and cardamon powder.
  7. Serve it chilled to your guests and enjoy.
