Healthy Sabudana Vada is my go to recipe whenever I am fasting and then you can have this guilt free. Before I tried my hand on this healthier version on Sabudana Vada, I could not fantom having it with so much of oil. Deep fried food has not been a favorite for quite some time. Blame it to heated oil that it makes you feel heavy after eating it.

So last year I tried making these small Healthy Sabudana Vadas in my appe pan and they came out so well.All this while, I never thought appe pan can be so handy and make life easier. Oh!! Have you checked this awesome kofta I tried with appe pan. 

When it comes to serving , add some hung curd dip, as it give a contrasting flavor to your Healthy Sabudana Vada and you would offcourse hardly take any time making one.

Ingredients
  1. Boiled Potato: 1
  2. Boiled Sweet Potato: 1
  3. Sabudana: 1 cup soaked overnight
  4. Green Chilli: 1 chopped
  5. Ginger : 1 tsp grated
  6. Salt: as per taste
  7. Black pepper: 1/2 tsp
  8. Cumin powder: 1/2 tsp
  9. Crushed roasted peanuts: 1 tbsp
  10. Coriander: 1 tbsp chopped
  11. Lemon juice: 1 tbsp
  12. Oil: 1 1/2 tsp
  13. Hung curd: 1 tbsp
Instructions
  1. Mash potato and sweet potato and mix well.
  2. In this add crushed peanuts, coriander, sadudana, cumin powder, black pepper, salt, lemon juice and ginger.
  3. Mix well and make small vadas.
  4. Now heat up your appe pan , smear some oil and put these vadas onto it.
  5. Use a spoon to flip it and cover it for sometime.
  6. Keep cooking this on slow flame and after 5-10 the vadas would be brownish from both sides and that's when they are ready.
  7. Grind some coriander and mix it with some black pepper and salt into the hungcurd.
  8. Serve Vadas with this hung curd dip.
