Ingredients
  1. Eggplant (Brinjal): 1 cup finely chopped
  2. Tomato: 1/2 cup finely chopped
  3. Bell pepper: 1/4 cup chopped
  4. Garlic: 2 tsp chopped
  5. Onion: 1 chopped
  6. Paneer: 1/2 diced
  7. Tomato Sauce: 1 tbsp
  8. Pasta seasoning: 1/2 tsp
  9. Black pepper powder: 1/2 tsp
  10. Salt: as per taste
  11. Cheese: 1 tsp grated
  12. Cream cheese (optional): 1/2 tsp
  13. Bread slices :4
  14. Olive oil: 1 tsp
Instructions
  1. Heat oil and saute garlic and then onions for a minute.
  2. Add bell pepper and cook a some time and then add tomato and cook for a minute.
  3. Now add egg plant and add some black pepper and salt in it and cook.
  4. At this stage add seasonings, tomato sauce and paneer and cook on slow.
  5. Add cheese and keep aside.
  6. Now spread cream cheese on the slice and spread the mixture on the bread.
  7. Now toast the sandwich and serve with chutney/sauce
