Pesto Paneer Wrap!! How does it sound?

This juicy Pesto Paneer Wrap will rock your lunch box for sure. I bet everyone would ask for more and your kids will only come back smiling. As I write this here , the taste of Pesto Paneer Wrap from morning is still fresh on my taste buds and I am just thinking for the first opportunity to call it a repeat here.

Now if you remember on of my lasts posts was Peas Pesto Rice and that is when I was left with some mint pesto and what better than to pack it for lunch box and get some happiness back. While these Pesto Paneer Wrap were so tempting that I replaced them for my breakfast and every bite was just out if the world. The mix of of flavors was enough to make me fall in love with Pesto Paneer Wrap.

Ingredients
  1. Whole wheat flour : 1 cup
  2. Oats flour : 2 tbsp
  3. Yoghurt: 2 tbsp
  4. Vegetable stock: 2-3 tbsp
  5. Ginger garlic paste: 1 tsp
  6. Salt: as per taste
  7. Fenugreek leaves: 1/2 cup chopped
  8. Paneer: 50 gms
  9. Mint leaves: 1/2 cup
  10. Green chilli: 1
  11. Almonds: 6-7
  12. Garlic: 5-6 cloves
  13. Olive oil: 1 tsp
  14. Lemon juice: 1 tbsp
  15. Vegetable stock: 1/2 cup
  16. Onion: 1 chopped
  17. Hung curd: 1 tbsp
  18. Black pepper: 1/2 tsp
  19. Salt: as per taste
  20. Oil: 1 tbsp
  21. Onion: 1 sliced
Instructions
  1. Make a pesto paste with mint, almonds, olive oil, salt, green chilli, garlic and lemon juice.
  2. Knead a soft dough out of wheat and oats flour, vegetable stock, yoghurt, ginger - garlic , salt and fenugreek leaves.
  3. In a pan heat 1/2 tsp oil, saute onions and add pesto paste with some vegetable stock and cook for a minute.
  4. Now add paneer cubes and let it cook with cover for 2 mins.
  5. Make a big chapati with the dough and cook with some drops of oil on both the side.
  6. In a bowl mix, hung curd, honey, black pepper and salt.
  7. Now take the chapati and spread the hung curd mixture and then add the paneer with pesto sauce along with onion slices.
  8. You can gently sprinkle some more hung curd mixture before wrapping this in a foil and serving it.
