I first time had Beetroot Sandwich in Mumbai where they made grilled sandwiches with different vegetables and boiled beetroot was one of the popular ones. Honestly as a kid I only saw beetroot used in salads and that too didn’t excite me enough. But this Beetroot Sandwich was good and I wanted to make my own version and that is when one day I tried my own version of Beetroot Sandwich.
I was tempted to make it spicy but since my son too had to eat it, I limited the usage of chillies in the mixture but still the outcome came out quite well. My family not just enjoyed the colour of the sandwich but the nutrition made me happier. So all my worries regarding the taste was taken over by the final product and family feedback. Adding cheese also enhanced the flavor however the quality is purely on individual’s choice. So the love of food and care for health makes sure that innovation keep happening in our kitchen.
- Beetroot:1 boiled and grated
- Garlic: 1 tbsp chopped
- Onions: 1 chopped
- Green Chilli:1 chopped
- Potato: 2 boiled and grated
- Cheese slice: 4
- Green Chutney:2 tbsp
- Salt: as per taste
- Black pepper powder: 1 tsp
- Oregano seasoning: 1 tsp
- Cumin powder: 1tsp
- Oil: 1 tbsp
- Cumin seeds: ½ tsp
- Bread: 8 slices
- Butter: 2 tbsp
- Heat oil and let cumin seeds splutter.
- Now let garlic become golden and then add green chilles and cook it for 2 mins.
- Add onions and sauté till its golden color and then mix grated potato and beetroot and cook it for 2 to 3 mins.
- Add seasonings of salt, cumin seeds, oregano and pepper and give it a good mix.
- Keep cooking it till the mixture sticks together like a ball and leaves the pan.
- Once it is cooked, let it cool down.
- Take bread slices and put butter on one side and green chutney on the other.
- Now spread the beetroot mixture on the butter side and then keep a cheese slice and cover it with the chutney slice.
- Now make sandwich either in sandwich maker or non stick pan.
