One of those days when I wanted to cook something different and unusual. Well mostly when I get bored working, cooking helps me take a break. Mid week mostly is not an interesting day specially if starts with an early morning, courtesy to hubby's travel schedules. Anyways I finished my calls and opened the refrigerator to find some beetroots in the basket.It took me couple of thoughts here and there before I was sure about trying Beetroot Halwa. I thought of making it in similar fashion like Carrot Halwa with some twist.
So the boiled and grated Beetroot turned into a yummy and I mean really yummy dessert in some 45 minutes. However since Beetroots are mostly sweet by themselves, I used Jaggery in preparing Beetroot Halwa and the addition of cinnamon powder took the flavor of my Wednesday to the next level.
Beetroot Halwa was loved by everyone in the family , specially my mom in law who found it just too delicious.
- Beetroot: 2 (boiled and grated)
- Clarified Butter: 2 tbsp
- Milk: 3 cups
- Milkmaid: 1 tbsp
- Jaggery: 1 tbsp
- Cardamom powder: ½ tsp
- Cinnamon powder: 1/4tsp (optional)
- Raisins : 10 -15
- Almonds: 10 – 12
- Heat Clarified Butter in a wok and add the beetroot and sauté for some 15 mins till the raw smell goes.
- Now pour milk and let it boil.
- Keep stirring and mixing as milk reduces.
- Once the milk is half reduced add milkmaid and keep stirring and cooking.
- In between mix jaggery and then cook till it reaches the halwa consistency.
- Mix cardamom powder, raisins and almonds.
- Add cinnamon powder and serve hot with a top garnish of almonds.
